Classic Banana Bread | Cooking Light Cookbook - Take #1

To read the full Classic Banana Bread recipe click here. This was my first time making this version of Banana Bread.

My Attempt/Success with this Recipe :

Recipe/Ingredients Changes : I'd have loved to make it the way my cookbook stated but 1) I enjoy mixing by hand therefore I don't own a mixer and 2) I didn't have enough ripe bananas as it asked for (I only had 2 bananas) so I added more yogurt in hopes of balancing it out.

  • Instead of 1 1/2 cups mashed ripe banana I used 3/4 cup mashed ripe banana
  • Instead of plain low-fat yogurt all I had to use Dannon Light & Fit Vanilla Flavored Yogurt
  • Instead of just 1/3 cup yogurt I added an additional 1/2 cup Dannon Light & Fit Vanilla Flavored Yogurt

My Family's Verdict :

My Food Critic Hubby's Thoughts : Said it was good ... only really wished that I added nuts into it.

My Thoughts : I liked it but with all that vanilla (because of my yogurt choice) it's more of a Vanilla Banana Bread than actual Banana Bread. I'd have no problem making it this way again.

My 3-year-old Daughter's Thoughts : When I asked her she said, "Yes. I just love some and I finished mine."

My 1-year-old Son : Had no problem eating it up. =0)
